If you are going to cook mash spuds then rethink how you do it?

Don't peel the spuds, baked them instead.

5/10mins in the microwave and finish off in the oven, then cut in half, scoop out the middles and mash with some milk and butter, salt and pepper to taste.

The empty skins with a little potato left in them can be put in the fridge or frozen and used with some other leftovers for lunch or a starter. Perfect with a little left over Chilli and some grated cheese, 10 minutes in the oven or under the grill and jobs a good 'in! :(y):
