Hot and Spicy Soup

Put the Garlic and Olive Oil in a pan and heat up, then add the Onions and fry until soft and golden brown.
Add the Pork and fry for around 5 minutes.
Take pan off the heat and add the Flour / Paprika/ Chilli powder, mix and stir well.
Add Tomato Puree and stir, put pan back on the heat.
Add the Chicken Stock, and a little salt and pepper to taste, bring to the boil and simmer for 30 minutes.
Add the Potatoes and Carrots, then simmer for a further hour.
Serve with Fresh Parsley and Sour Cream (optional) and Garlic or Crusty Bread.
