On GT media you can select bein English 1or2 audio ,they carry eng Comms,maybe there is something similar on the viark.

If you are from uk area then yes but not everybody is, everything else is available in other laguages.
Probably more stb are sold to open other providers, uk is a nice to have for them

Generally need to adjust/delay audio/video to sync doing that.

They've opened it for now so boxes without the 147 update can access SKYIT. Once 147 firmware is available for all boxes they will close that door
