Thanks for the inspiration dee. ;) I'm cooking some curry pork this evening tho... rofl... I just couldn't stand it!! :woot:

Ok... I hate dee now!!! I actually made some curry pork and it's frikkin GOOD EATS baby!! But wait a tick.. I love dee for "making" me do it!!! ROFL

You likey curry food Oman?? I've never fixed it before and was very happy with the turnout... I"m trying chicken next time... someone told me that legs and thighs make excellent chicken curry. ;)
 
Definitely love curry! In just about any form too. I'm generally not too picky when it comes to food. But I of course do have my favorites. Pepper steak sandwiches being one of my favorite :D Can't seem to find some worthwhile pics of what I make. I'll post some some time ;)

Hey GM, that looks pretty tasty!

Chicken goes really well with curry. I usually use legs and thighs, bone in. Should probably cut the legs because they're pretty big.

The trick to making the curry MAGICAL is to use coconut milk for aroma effect. Yes, it's quite sweet, that's why you have to be conservative and add to taste, but if you can get the proportion right you will eat til you can't move, like me. The Portuguese and southeast Asian countries tend to use it, I think (or was that Macao, which was a Portuguese colony in China? whatever). For veggies, add in carrots and potatoes (taro instead if you're feeling adventurous), and some onions as well. The onions should be mostly reduced to nothing by the time you're done stewing. If you don't want the potatoes to break down, add them in later during the cooking process.

As for spices, ginger (essential IMO) and star anise go a long way towards perfection.

As you can see, I love curry :) Good stuff! Btw as soon as I get my post count up I will be able to post my own photos instead of asking endo to upload em for me.
