Hi, this is my version of lentil and bacon soup which is very filling, high in fibre and very tasty
you'll need:
a carrot, chopped
an onion, chopped
8oz bacon
2 cloves garlic, chopped/crushed
1 chilli, chopped
1 tsp cumin
half tsp tumeric
1.25L boiling water
2 chicken stock cubes
150g lentils
take one rasher of bacon and grill or fry until crispy, put aside for later
chop the rest of the bacon and fry with the onions and carrot in a little oil for ten minutes
add the chilli, garlic, tumeric and cumin and fry for another five mins
add to stock pot with the boiling water and stock cubes, cover and simmer for 25 mins
at this point I usually put the hand blender in for a bit to get rid of the lumps but this is personal preference, leave it lumpy if you prefer.
add the lentils and simmer UNCOVERED for 20 more minutes, stirring every 5 mins to avoid sticking
chop the crispy rasher into bits and sprinkle on top when serving with crusty bread
Edit: use low salt stock cubes if you're watching your salt/sodium intake
