White Chocolate Brownies

175g (6oz) shelled hazel nuts.
500g (1lb 2oz) white chocolate.
75g (3 oz) butter.
3 eggs
175g (6oz) caster sugar.
175g (6oz) self raising flour.
pinch of salt.
5ml (1 tsp) vanilla essence.

Preheat the oven to gas mark 5. grease and line a backing tin.

Roughly chop the hazel nuts, 400g (14 oz) of chocolate and set aside.
Break up the remaining chocolate put in to a bowl with the butter.
Place over a pan of simmering water until melted.
Leave to cool slightly.

Whisk the eggs and sugar together in a large bowl until smooth,
then gradually beat in the melted chocolate mixture,
sift the flour and salt over the mixture then fold in the hazel nuts,
chopped chocolate and vanilla essence.

Turning the mixture into the prepared tin and level out.
Bake for 30-35 minutes until risen and golden brown,
and the cenre is just firm to the touch.
Leave to cool in the tin,
turn out and cut into 12 squares.

TOP TIP

When cooked the mixture will still be very soft under the crust, it will firm up while cooling.
 
lol there easy just keep an eye on them. oh got the white choc from tesco used there own brand 27p a 100g bar. lovely tasting choc.
 
so its not actually cooking chocolate Dee, sorry for wrecking your head, just want to have it all correct ;)
