This is very similar to the method I use.... I like to wrap them in aluminum foil and finish on the smoker or in the oven... it's heat anyway you look at it after about 5-7 hours. ;) Like the guy says.. NO more smoke can get in and besides you don't want it over-powering the meat anyway. ;)
