i have seen a recommendation to change the DNS setting to 8.8.8.8
Can anyone say why it might be a good idea.
I know the HOW but not the WHY?

as no one more has answered I will offer a possible suggestion. 8.8.8.8 is the DNS server address used by google. When you search for a web page a DNS server tells your device where the page is on the internet. Google DNS servers are meant to be more comprehensive and faster than many.
